of beer, nor any people who can claim they drank beer before another or that they were the first to brew and consume it.<\/p>\n<p>The truth is that the development of craft beer and its consequent beer culture would have occurred independently and surprisingly similarly in Mesopotamia, Africa, the East, and the Americas.<\/p>\n<p>Each people evolved their brewing techniques based on the grains available to them: wheat and barley beer in Mesopotamia and Egypt (kas and zythum); millet and sorghum in Africa (kaffir); rye in Russia (kvas);\u00a0rice in Japan, China, and Korea (<a href=\"https:\/\/www.thebeertimes.com\/como-preparar-sake-en-casa-todo-lo-que-necesitas-saber\/\" target=\"_blank\" rel=\"noopener noreferrer\">sake<\/a>, samshu, and suk); agave in Mexico (pulque); corn and wheat; and even pine nuts in South America (<a href=\"https:\/\/www.thebeertimes.com\/chicha-definicion-y-etimologia-de-los-fermentados-originarios-de-america\/\" target=\"_blank\" rel=\"noopener noreferrer\">chicha<\/a> and\/or <a href=\"https:\/\/comidaschilenas.com\/receta-muday-de-trigo\/\" target=\"_blank\" rel=\"noopener noreferrer\">muday<\/a>).<\/p>\n<p>In general, fermented beverages produced from other sugar sources are not called beer, even though they are made through a similar yeast-based fermentation process.<\/p>\n<p>For example, fermented apple juice is called &#8220;cider,&#8221;\u00a0fermented pear juice is called &#8220;perry,&#8221; \n<\/script>\n<\/div>\n\n<h2>Beer ingredients<\/h2>\n<p>In summary, we can say that brewing consists of 4 main ingredients (recognized in the Purity Law decreed by William IV), though not exclusive: <a href=\"https:\/\/amzn.to\/2HonXgf\" target=\"_blank\" rel=\"noopener noreferrer\">water<\/a>, <a href=\"https:\/\/amzn.to\/2JBcgFv\" target=\"_blank\" rel=\"noopener noreferrer\">malt<\/a>, <a href=\"https:\/\/amzn.to\/2WFleW1\" target=\"_blank\" rel=\"noopener noreferrer\">hops<\/a>, and <a href=\"https:\/\/amzn.to\/2LHl0N5\" target=\"_blank\" rel=\"noopener noreferrer\">yeast<\/a>, from which an endless variety of <a href=\"https:\/\/recetasdecerveza.net\/\" target=\"_blank\" rel=\"noopener noreferrer\">different beer recipes<\/a>, specialty beers, or even non-alcoholic beers can be created.<\/p>\n<h3>1. If the chemical fundamentals are known, it is possible to adapt any type of water to fit the <a href=\"https:\/\/www.thebeertimes.com\/guia-de-estilos-de-cerveza-bjcp-2015-espanol\/\" target=\"_blank\" rel=\"noopener noreferrer\">beer style<\/a> (India Pale Ale, Stout, etc.) you wish to brew; otherwise, you can simply choose to brew the beer style that best suits the available water type.<\/p>\n<p>In general, some of the water minerals that interest brewers most are calcium, sulfates, and chlorides. Calcium increases the extraction of both malt and hops during mashing and boiling, reducing haze in the beer.<\/p>\n<p>Copper, manganese, and zinc inhibit yeast flocculation. Sulfates reinforce hop bitterness and dryness, while chlorides provide a fuller texture and enhance sweetness.<\/p>\n<h3>2. Malt<\/h3>\n<p>Malt is the product obtained from the controlled development of cereal grain germination, after which a drying and toasting procedure is applied.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-10618\" title=\"Barley malt\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/11\/Malta-1-300x159.jpg\" alt=\"Malt\" width=\"400\" height=\"211\" srcset=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/11\/Malta-1-300x159.jpg 300w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/11\/Malta-1-114x60.jpg 114w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/11\/Malta-1.jpg 600w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>The goal of the malting process is to activate the enzymes that will later be responsible for converting the grains&#8217; starches into fermentable sugars.<\/p>\n<p>Once the grain has been transformed, the malt provides the starch, enzymes, and proteins necessary for producing the wort, the sweet broth that will serve as the yeast culture.<\/p>\n<p>Likewise, the drying and toasting process gives the grains their characteristic color and aromas, which will later contribute to the final character of the beer.<\/p>\n<p>In brewing, it is possible to use any cereal that has been malted so that its sugars become fermentable, with barley being the most widely used grain in Western brewing.<\/p>\n<p>When toasting is minimal, we speak of pale malts, but toasting can even reach the point of burning.<\/p>\n<p>Basically, the types of malt can be divided into three categories:<\/p>\n<h4>Base malts<\/h4>\n<p>These are pale malts, lightly kilned, with high enzymatic power (ability to convert starch into fermentable sugars), usually making up 85-100% of the total grain bill when brewing.<\/p>\n<p>Among the best known are Pilsner (Czech Republic), pale ale, Munich, and Vienna malts.<\/p>\n<h4>Specialty malts<\/h4>\n<p>These are highly kilned malts, with little or no enzymatic power, ranging in color from amber to black.<\/p>\n<p>Generally, they are used in small quantities and aim to develop specific colors and\/or aromas\/flavors in the beer, depending on the style.<\/p>\n<p>There is a wide variety of specialty malts, including black malts, chocolate malts, roasted malts, etc.<\/p>\n<h4>Mixed malts<\/h4>\n<p>These are malts that undergo an intense kilning process but retain sufficient enzymatic properties to be used as a base or additives.<\/p>\n<p>This category includes Crystal malts (England) and Caramel malts (Germany).<\/p>\n<h3>3. Hops<\/h3>\n<p>Hops (Humulus lupulus) is a plant of the Cannabaceae family, <a href=\"https:\/\/www.thebeertimes.com\/en\/?p=46883\" target=\"_blank\" rel=\"noopener noreferrer\">a relative of Cannabis sativa<\/a>, native to Europe, Western Asia, and North America.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-9446\" title=\"Hops\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/09\/Flores_de_Lupulo-300x158.jpg\" alt=\"Hop cones\" width=\"400\" height=\"210\" srcset=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/09\/Flores_de_Lupulo-300x158.jpg 300w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/09\/Flores_de_Lupulo-114x60.jpg 114w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/09\/Flores_de_Lupulo.jpg 600w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>Historically, hops were not used as a common ingredient in brewing until after 1500 AD and were widely popularized during the 18th and 19th centuries.<\/p>\n<p>Before that, brewers used a mixture of herbs called &#8220;<a href=\"https:\/\/www.thebeertimes.com\/en\/what-is-gruit-herb-and-spice-blend-used-in-beer-before-hops\/\" target=\"_blank\" rel=\"noopener noreferrer\">Gruit<\/a>&#8220;, mainly composed of yarrow (Achillea millefolium), mugwort (Artemisia vulgaris), and sweet gale (Myrica gale), to provide flavors and aromas to beer that would balance the sweetness of the malts during consumption.<\/p>\n<p>The hops used in brewing come from the female flowers of the plant, called &#8220;cones,&#8221; which house the so-called &#8220;lupulin&#8221; glands.<\/p>\n<p>Lupulin is a yellowish resin that is transformed during the brewing process, providing aromas, flavors, and antibacterial preservative capabilities, also helping to later stabilize the process of foam formation and retention.<\/p>\n<p>Its main components are:<\/p>\n<h4>Alpha acids<\/h4>\n<p>They are a set of resins, mainly humulone, cohumulone, and adhumulone, responsible for the <a href=\"https:\/\/www.thebeertimes.com\/en\/the-5-basic-flavors-and-how-the-senses-work\/\" target=\"_blank\" rel=\"noopener noreferrer\">bitter taste<\/a> in beer.<\/p>\n<p>When boiled, these resins undergo a transformation process called isomerization, from which the bitter compounds that are finally dissolved in the beer, known as iso-alpha acids, are formed.<\/p>\n<h4>Beta acids<\/h4>\n<p>Also called lupulones, they are resins with low bitterness potential, but when oxidized, they can generate off-flavors and <a href=\"https:\/\/www.thebeertimes.com\/es\/glosario-cervecero\/\" target=\"_blank\" rel=\"noopener noreferrer\">astringency<\/a> in the beer.<\/p>\n<h4>Essential oils<\/h4>\n<p>These are responsible for providing <a href=\"https:\/\/www.thebeertimes.com\/en\/morten-meilgaard-and-the-development-of-the-beer-flavor-and-aroma-wheel\/\" target=\"_blank\" rel=\"noopener noreferrer\">flavor and aroma to the beer<\/a>. Their quantity and quality are specific to each hop variety but generally represent between 0.5 and 3% of its total mass.<\/p>\n<h4>Tannins<\/h4>\n<p>They are responsible for inhibiting bacterial growth, favoring the healthy development of yeast during fermentation. This antibacterial action lasts over time, helping to preserve the beer.<\/p>\n<p>Hops are classified into three main categories:<\/p>\n<h4>Bittering hops<\/h4>\n<p>These are rich in alpha acids and are added at the start of the boil.
