consumer in Latin America, surpassed only by Mexico, Brazil and Colombia.<\/p>\n<p>However, despite strong sales and consumption figures, all the <a href=\"https:\/\/www.thebeertimes.com\/en\/beer-types-origin-and-styles\/\" target=\"_blank\" rel=\"noopener\">beer varieties<\/a> available on the market \u2014 including domestic brands \u2014 have a &#8220;foreign&#8221; origin when it comes to the yeasts used to brew them.<\/p>\n<p>Take the case of lager-style beers, the most consumed type of beer not only in Chile but worldwide, recognizable by their pronounced flavor best enjoyed cold and their typical golden color in the most common versions.<\/p>\n<p>95% of the industry that produces this beer uses, for fermentation, a yeast variety known as <em>Saccharomyces pastorianus<\/em>, developed over 500 years in the Bavaria region of southeastern Germany and first discovered in the Carlsberg brewery&#8217;s laboratories by <a href=\"https:\/\/www.thebeertimes.com\/louis-pasteur-y-emil-christian-hansen-los-doctores-de-la-cerveza\/\" target=\"_blank\" rel=\"noopener\">Emil Christian Hansen<\/a> in 1875.<\/p>\n<p>Since at least 1985, it has been known that <em>Saccharomyces pastorianus<\/em> is a hybrid yeast \u2014 the result of combining two pure yeast species.<\/p>\n<p>While half of its genes come from the much more common <em>Saccharomyces cerevisiae<\/em>, used in the production of ale or &#8220;top-fermented&#8221; beers, the other half comes from a species whose identity eluded scientists for many years.<\/p>\n<div id=\"thebe-1778644047\" style=\"margin-bottom: 30px;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-9395258998211551\" crossorigin=\"anonymous\"><\/script><ins class=\"adsbygoogle\" style=\"display:block;\" data-ad-client=\"ca-pub-9395258998211551\" \ndata-ad-slot=\"8775458773\" \ndata-ad-format=\"auto\"><\/ins>\n<script> \n(adsbygoogle = window.adsbygoogle || []).push({}); \n<\/script>\n<\/div>\n\n<h2>The Yeast That Crossed the Pond<\/h2>\n<p>That changed in 2011, when a group of researchers led by <a href=\"http:\/\/www.fiq.unl.edu.ar\/aniversariofiq\/docentes\/diego-libkind-2\/\" target=\"_blank\" rel=\"noopener\">Diego Libkind<\/a> discovered a new variety of the genus <em>Saccharomyces<\/em> on the other side of the world \u2014 in the Andean Patagonian forests, specifically on fungi of the genus <em>Cyttaria<\/em> (known locally as <em>dig\u00fce\u00f1es<\/em>) growing on trees of the genus <em>Nothofagus<\/em>.<\/p>\n<p>The new species, they found, was not only similar to <em>Saccharomyces pastorianus<\/em> in its ability to ferment at low temperatures, but also shared a large portion of its genetic makeup.<\/p>\n<figure id=\"attachment_1740\" aria-describedby=\"caption-attachment-1740\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1740\" title=\"Ale fermentation vs. lager fermentation\" fact, it matched 99.5% of the still-unidentified half of <em>Saccharomyces pastorianus<\/em>&#8216;s genome.<\/p>\n<p>Subsequent taxonomic studies confirmed that this was none other than <a href=\"https:\/\/www.thebeertimes.com\/en\/the-origins-of-lager-yeast-and-its-transatlantic-journey-from-south-america\/\" target=\"_blank\" rel=\"noopener\">the &#8220;lost&#8221; mother of European lager yeasts<\/a>.<\/p>\n<p>Other scientists have speculated that <em>Saccharomyces eubayanus<\/em> \u2014 the name given to this new yeast \u2014 may have traveled across the Atlantic in the legs of fruit flies swarming around beer barrels or fruit juice, surviving the intercontinental journey thanks to its ability to withstand cold.<\/p>\n<p>Once in Europe, <em>Saccharomyces eubayanus<\/em> would have hybridized with <em>Saccharomyces cerevisiae<\/em> to give birth to <em>Saccharomyces pastorianus<\/em> which, despite being a sterile species, was able to replicate thanks to the conditions provided by the Bavarian master brewers who worked with it.<\/p>\n<p>Even so, no pure strain of <em>Saccharomyces eubayanus<\/em> has yet been found on the European continent to confirm this hypothesis.<\/p>\n<h2>On the Other Side of the Andes<\/h2>\n<p>Where <em>Saccharomyces eubayanus<\/em> does appear to have thrived is on both sides of the Andes, especially in the extensive <em>Nothofagus<\/em> forests of Chilean Patagonia.<\/p>\n<p>It was there that evolutionary biologist Roberto N\u00e9spolo (<a href=\"http:\/\/www.capes.cl\/\" target=\"_blank\" rel=\"noopener\">Center for Applied Ecology and Sustainability<\/a> and <a href=\"https:\/\/www.uach.cl\/\" target=\"_blank\" rel=\"noopener\">Universidad Austral<\/a>), together with geneticist Francisco Cubillos (<a href=\"https:\/\/www.ibio.cl\/\" target=\"_blank\" rel=\"noopener\">Millennium Institute of Integrative Biology<\/a> and <a href=\"https:\/\/www.usach.cl\/\" target=\"_blank\" rel=\"noopener\">Universidad de Santiago<\/a>), not only confirmed the Patagonian origin of this diaspora to the Northern Hemisphere, but also revealed that the genetic lineage of this &#8220;mother yeast&#8221; reached other regions of the globe through a process of evolutionary co-occurrence.<\/p><div id=\"thebe-4139114289\" class=\"thebe-libros-amazon thebe-entity-placement\" along 2,000 kilometers of forest, covering 10 national parks and reserves between the Maule and Magallanes regions, where strains of <em>Saccharomyces eubayanus<\/em> were collected from the bark of lenga beech trees (<em>Nothofagus pumilio<\/em>), coig\u00fce (<em>N. dombeyi<\/em>), \u00f1irre (<em>N. antartica<\/em>) and araucaria (<em>Araucaria araucana<\/em>).<\/p>\n<p>From these samples, the researchers isolated 160 strains of <em>Saccharomyces eubayanus<\/em>, successfully sequencing the genome of 83 of them, revealing the enormous genetic diversity of this yeast in the region.<\/p>\n<p>Roberto N\u00e9spolo explains:<\/p>\n<blockquote><p>During our research, we demonstrated that the current distribution of this yeast has its origin and greatest diversity in Chilean Patagonia. From Talca to Karukinka we were able to learn about the differences in the fermentative capacity of the yeast \u2014 which is enormous \u2014 and how it varies, for example, with altitude and temperature. It is a very large heritage that was not known before this research.<\/p><\/blockquote>\n<h2>Beer with Native Chilean Yeast<\/h2>\n<p>In addition to a comprehensive phylogenetic analysis \u2014 carried out by <a href=\"https:\/\/www.ibio.cl\/\" target=\"_blank\" rel=\"noopener\">iBio<\/a> researcher Carlos Villarroel with support from Pablo S\u00e1enz of the <a href=\"http:\/\/icaev.cl\/\" target=\"_blank\" rel=\"noopener\">Institute of Environmental and Evolutionary Sciences<\/a> (UACh) \u2014 the researchers identified a particular group of strains with great potential for beer production, through an evaluation of the different fermentative capacities of these yeasts and their production of volatile compounds.<\/p>\n<p>Yeasts are a unicellular fungus that converts the sugars in beer wort into alcohol and CO<sub>2<\/sub>, a process known as fermentation, required for the <a href=\"https:\/\/www.thebeertimes.com\/como-hacer-cerveza-artesanal-paso-a-paso\/\" target=\"_blank\" rel=\"noopener\">production of beer<\/a>, wine and other fermented alcoholic beverages.<\/p>\n<figure id=\"attachment_22309\" aria-describedby=\"caption-attachment-22309\" style=\"width: 500px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-22309\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2021\/10\/Cerveza-Lenga.jpg\" alt=\"&quot;Lenga&quot; beer<\/figcaption><\/figure>\n<p>Once the best-performing strains were identified, N\u00e9spolo and Cubillos continued working with <em>S. eubayanus<\/em> to test its cold tolerance and continually improve its fermentation attributes and adaptability.<\/p>\n<p>The goal: to promote the creation of new lager hybrids for brewing, as well as the standalone use of <em>Saccharomyces eubayanus<\/em>.<\/p>\n<p>The first step toward these objectives was the launch of the &#8220;<a href=\"https:\/\/www.opia.cl\/601\/w3-article-117721.html\" target=\"_blank\" rel=\"noopener\">Native Yeasts for Craft Beer<\/a>&#8221; project \u2014 a winner of Chile&#8217;s Innovation and Competitiveness Fund (FIC) and the Los R\u00edos Regional Council, led by engineer Jos\u00e9 Ruiz, with the collaboration of the Millennium Institute iBio, FONDECYT and CAPES.<\/p>\n<p>The project, launched in 2019, included the signing of an agreement with representatives of the Valdivian brewing company Bundor, which allowed the researchers to begin the experimental work of extracting, isolating and analyzing these strains, followed in a second stage by working &#8220;with some producers in a broader analysis of this native yeast as a marketable product,&#8221; says N\u00e9spolo.<\/p>\n<p>These initial partnerships were complemented by the construction in Valdivia of a laboratory specially equipped for the production of beer fermented with this native strain, whose installation and operation was handled by the Sayka brewery in Valdivia, with the ongoing advisory support of the <em>Saccharomyces eubayanus<\/em> research team.<\/p>\n<p>And so, after many tests and attempts, in 2020 &#8220;<a href=\"https:\/\/www.beergeeks.cl\/lanzamientos\/lenga-cerveza-chilena-fermentada-con-levaduras-de-bosques-patagonicos\/\" target=\"_blank\" rel=\"noopener\">Lenga<\/a>&#8221; was born \u2014 Chile&#8217;s first craft beer with a denomination of origin.<\/p>\n<p>The beer was produced and distributed by the Growler brewery, located on Isla Teja, whose team received the first yeast concentrate from the scientists with the mission of brewing and distributing the first 120 liters of the product.<\/p>\n<div id=\"thebe-839967897\" style=\"margin-bottom: 20px;margin-left: auto;margin-right: auto;text-align: center;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-9395258998211551\" crossorigin=\"anonymous\"><\/script><ins class=\"adsbygoogle\" style=\"display:block; \n<\/script>\n<\/div>\n<h2>Next Steps<\/h2>\n<p>Since then, the beer created with this native yeast has gone through various validation stages, including a recent tasting held in April 2021, where a panel of experts from Valdivia, Los Lagos and Santiago evaluated three types of beers fermented with this strain: a Stout from the Cuello Negro brewery, a Hazy IPA from El Growler and a Hoppy Lager from Cervecer\u00eda Sayka.<\/p>\n<p>The tasting was part of a new FIC 20-32 project called &#8220;<a href=\"https:\/\/www.opia.cl\/601\/w3-article-117278.html\" target=\"_blank\" rel=\"noopener\">Supporting the Economic Recovery of Craft Breweries with Native Strains<\/a>,&#8221;
