href=\"https:\/\/www.thebeertimes.com\/maceracion-descubre-todos-sus-secretos\/\" target=\"_blank\" rel=\"noopener\">a single mash<\/a>, obtaining two or three worts of different gravity that are then sophisticated solutions to modern problems.<\/p>\n<p>Given that the average homebrewer works with equipment that could be described as &#8220;medieval,&#8221; these methods are often particularly well-suited to homebrewing \u2014 but they can also be applied to commercial brewing.<\/p>\n<p>One of the techniques that has almost disappeared from modern practice is precisely brewing through the parti-gyle method.<\/p>\n<div id=\"thebe-3938249068\" style=\"margin-bottom: 30px;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-9395258998211551\" \ndata-ad-format=\"auto\"><\/ins>\n<script> \n(adsbygoogle = window.adsbygoogle || []).push({}); \n<\/script>\n<\/div>\n\n<h2>Parti-gyle brewing<\/h2>\n<p>Parti-gyle is a technique that involves extracting the first portion of the mash and using it to brew a <a href=\"https:\/\/www.thebeertimes.com\/strong-ale-inglesa-vs-strong-ale-americana-referencias-estilo\/\" target=\"_blank\" rel=\"noopener\">Strong Ale<\/a> or a <a href=\"https:\/\/www.thebeertimes.com\/es\/barleywine-ingles-vs-barleywine-americano\/\" target=\"_blank\" rel=\"noopener\">Barleywine<\/a>; then re-sparging the grain and collecting a second, weaker and more watery wort, often called &#8220;small beer.&#8221;<\/p>\n<p>Back then, it was relatively easy to build large wooden mash tuns, but the technology required to build equally large kettles had not yet been developed.<\/p>\n<p>As a result, English breweries of the <a href=\"https:\/\/en.wikipedia.org\/wiki\/Victorian_era\" target=\"_blank\" rel=\"noopener\">Victorian era<\/a> often brewed three beers from a single mash: a strong beer (XXX), a regular one (XX), and a light one (X).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" href=\"https:\/\/www.thebeertimes.com\/cervezas-trapenses-ora-et-labora\/\" target=\"_blank\" rel=\"noopener\">Trappist beers<\/a>. The Tripel was brewed with the first undiluted wort, the Dubbel was brewed from the runnings of a second sparge, and the Simple from the wort obtained in a final infusion.<\/p>\n<p>Many medieval breweries had two or three kettles, which they first used to heat the mash water and then to receive and boil the different worts.<\/p>\n<p>Other breweries simply boiled the first wort, transferred it to the cooler, re-heated water for a second mash, flooded the grain again, and collected the second wort into the kettle.<\/p>\n<p>Often, the second wort was even boiled with the hops from the first batch.<\/p>\n<h2>The Industrial Revolution and beer<\/h2>\n<p>Commercial brewing evolved from a craft process to an industrial one in the late eighteenth century, driven by the technological advances of the Industrial Revolution, which made it possible to manufacture and heat larger kettles than had previously been possible.<\/p>\n<p>This helped drive the great Porter beer revolution, which had begun in 1722 and established a new brewing method called &#8220;entire&#8221; \u2014 the name by which Porter beers were known during the early years of their existence.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-14425\" title=\"Mashing\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2019\/03\/Maceraci\u00f3n-300x158.jpg\" alt=\"Mashing\" width=\"400\" height=\"210\" srcset=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2019\/03\/Maceraci\u00f3n-300x158.jpg 300w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2019\/03\/Maceraci\u00f3n-114x60.jpg 114w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2019\/03\/Maceraci\u00f3n.jpg 600w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>During production, all the wort was transferred to a vessel and then boiled to produce a single-gravity batch.<\/p>\n<p>Its development and influence was so significant that this method remains the most widely used by homebrewers and commercial brewers today.<\/p>\n<p>Those who brew large batches at home face a slightly different, though related, problem: not having enough variety of beers.<\/p>\n<p>The typical 15-gallon (57-liter) batch <a href=\"https:\/\/www.thebeertimes.com\/barriles-de-cerveza-historia-tipos-y-usos\/\" target=\"_blank\" rel=\"noopener\">brewed in adapted barrels<\/a> allows you to produce a good quantity of beer \u2014 but unless you have a rock band living in your house, you might want more variety, especially if the beer is experimental.<\/p>\n<p>Parti-gyle is therefore the technique that allows you to split the brew session and produce different types of beer in a single day: one or two additional varieties beyond what you would normally make.<\/p>\n<p>This is not very different from what happened in the Victorian era, when the cost of malt was very high relative to the wages of those who consumed it.<\/p>\n<p>Yet English pubs were accustomed to offering a wide variety of beers to suit the preferences of their customers.<\/p>\n<p>Parti-gyle was the technical answer to this problem \u2014 not a trick, but a well-established common practice that had improved considerably over time.<\/p>\n<h2>The homebrewing parti-gyle method<\/h2>\n<p>Let&#8217;s look at an example using a 15-gallon (57-liter) setup. It requires a small secondary or decoction kettle, or at least a holding vessel to park one portion while the other is boiling.<\/p>\n<p>Obviously, appropriately sized fermentation vessels would also be needed.<\/p>\n<h2>Recipe formulation<\/h2>\n<p>Naturally, brewing using the parti-gyle technique makes <a href=\"https:\/\/www.thebeertimes.com\/como-disenar-una-receta-de-cerveza-artesanal-paso-a-paso\/\" target=\"_blank\" rel=\"noopener\">recipe formulation<\/a> a bit more complex, especially with regard to color.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-10129\" title=\"Recipe formulation\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/10\/Receta_IPA.jpg\" alt=\"Recipe formulation\" width=\"400\" height=\"208\" srcset=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/10\/Receta_IPA.jpg 500w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/10\/Receta_IPA-300x156.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>The method produces two or more batches, each with a different gravity and color \u2014 but neither represents the overall batch formulation for which the recipe must be written.<\/p>\n<p>If desired, you can run a mini-mash of specialty malts alongside the main batch to provide a bit of extra color to the lighter batch.<\/p>\n<div id=\"thebe-1983115198\" style=\"margin-bottom: 30px;\"><div id=\"pf-15242-1\" data-format=\"display\" ><script>window.pubfuturetag = window.pubfuturetag || [];window.pubfuturetag.push({unit: \"683988d268662b3361d8a48f\", id: \"pf-15242-1\"})<\/script><\/div><\/div>\n<h2>Basic parti-gyle math<\/h2>\n<p>For example, a 15-gallon (57-liter) batch that yields 5 gallons (19 liters) of wort at 22\u00b0P (1.092) will also produce 10 gallons (38 liters) of wort at 11\u00b0P (1.046).<\/p>\n<p>To calculate the gravity of the master batch boil, you multiply the gravity and volume of each boil (\u00b0gal), add them together to get the total boil gravity, and then divide by the total volume.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-21762\" title=\"Parti-gyle formula\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2021\/08\/Formula-parti-gyle.png\" alt=\"Parti-gyle formula\" width=\"400\" height=\"142\" srcset=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2021\/08\/Formula-parti-gyle.png 499w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2021\/08\/Formula-parti-gyle-300x106.png 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>The result (14.67\u00b0P) is the gravity at which the entire batch must be brewed to achieve the desired individual gravities for each portion.<\/p>\n<p>You don&#8217;t have to stick to a 2:1 gravity ratio.
