tell them apart.<\/p>\n<p>Many people often refer to these sour beer yeasts and bacteria without fully knowing what they are, so it is worth taking some time to establish a clear record of each one.<\/p>\n<p>To better understand these terms, we asked Michael Tonsmeire (known for his blog <a href=\"http:\/\/www.themadfermentationist.com\/\" target=\"_blank\" rel=\"nofollow noopener \n<\/script>\n<\/div>\n\n<h2>Understanding wild fermentation<\/h2>\n<p>To start, it is key to understand the difference between wild fermentation and single-culture fermentation.<\/p>\n<p>Sour beers are beers subjected to <a href=\"https:\/\/www.thebeertimes.com\/es\/2017\/08\/14\/consejos-elaborar-cervezas-sour-en-casa\/\" target=\"_blank\" rel=\"noopener noreferrer\">wild fermentations<\/a> or <a href=\"https:\/\/www.thebeertimes.com\/que-es-la-fermentacion-mixta-familias-cepas-e-interaccion-microbiana\/\" target=\"_blank\" rel=\"noopener\">mixed fermentations<\/a>; this means that various yeasts and bacteria will work together to create a beer with a &#8220;funky&#8221; character\u2014a term widely used in this style of beer that can be defined as a set of aromas and flavors considered <a href=\"https:\/\/www.thebeertimes.com\/es\/2016\/09\/30\/off-flavors-aromas-y-sabores-no-deseados-en-la-cerveza\/\" target=\"_blank\" rel=\"noopener noreferrer\">off-flavors<\/a> in &#8220;traditional&#8221; beers, yet create a unique profile outside the spectrum produced by conventional brewing yeast.<\/p>\n<figure id=\"attachment_6469\" controlled\u2014meaning brewers have selected exactly which yeast and bacteria to inoculate\u2014or open-fermented, which is when fermenters are left fully or partially open to allow wild yeasts and bacteria from the environment to enter.<\/p>\n<h2>Yeasts and bacteria used in sour beers<\/h2>\n<p>The yeast responsible for fermenting all &#8220;traditional&#8221; beers is called Saccharomyces, while <a href=\"https:\/\/amzn.to\/2X5MkqY\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Brettanomyces<\/a>, <a href=\"https:\/\/amzn.to\/2TiDsgj\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Lactobacillus<\/a>, and <a href=\"https:\/\/amzn.to\/2ZrOKTF\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Pediococcus<\/a> are something like the &#8220;Three Stooges&#8221; of sour beer production.<\/p>\n<p>Together they develop funky, unpredictable beers, but there is also a variety of bacteria that add something extra to sour beers.<\/p>\n<h3>1. Saccharomyces<\/h3>\n<p>Saccharomyces, commonly known as brewer&#8217;s yeast, is the only genus of yeast responsible for fermenting all non-sour beer styles, but it is also used in sour beer production.<\/p>\n<p>Brewer&#8217;s yeast is responsible for most of the gravity reduction and alcohol production in nearly all sour beers.<\/p>\n<figure id=\"attachment_11907\" aria-describedby=\"caption-attachment-11907\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-11907\" title=\"Saccharomyces\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2018\/06\/Saccharomyces_cerevisiae-300x158.jpg\" alt=\"Saccharomyces\" width=\"400\" height=\"210\" srcset=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2018\/06\/Saccharomyces_cerevisiae-300x158.jpg 300w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2018\/06\/Saccharomyces_cerevisiae-114x60.jpg 114w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2018\/06\/Saccharomyces_cerevisiae.jpg 600w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><figcaption id=\"caption-attachment-11907\" class=\"wp-caption-text\">Saccharomyces<\/figcaption><\/figure>\n<p>No strain of Saccharomyces yeast will ruin a sour beer, but some strains work better than others for certain sour beer types.<\/p>\n<p>Saccharomyces is a fast-working yeast, highly tolerant to bitterness (<a href=\"https:\/\/www.thebeertimes.com\/es\/glosario-cervecero\/\" target=\"_blank\" rel=\"noopener noreferrer\">IBU<\/a>), acting as a base yeast for sour beer production.<\/p>\n<p>In general, brewer&#8217;s yeast protects the wort and sets the stage for a traditional, slow-developing wild fermentation.<\/p>\n<h3>2. <a href=\"https:\/\/amzn.to\/2ZeQAqL\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Brettanomyces<\/a><\/h3>\n<p>Brettanomyces, often referred to simply as &#8220;Brett,&#8221; is a genus of yeast, not bacteria, as too many brewers tend to believe.<\/p>\n<figure id=\"attachment_17820\" aria-describedby=\"caption-attachment-17820\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-17820\" title=\"Brettanomyces in beer\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/12\/Brettanomyces-en-la-cerveza-300x158.jpg\" alt=\"Brettanomyces in beer\" width=\"400\" height=\"210\" srcset=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/12\/Brettanomyces-en-la-cerveza-300x158.jpg 300w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2016\/12\/Brettanomyces-en-la-cerveza.jpg 600w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><figcaption id=\"caption-attachment-17820\" class=\"wp-caption-text\">Brettanomyces<\/figcaption><\/figure>\n<p>It is the primary wild yeast used in sour beer production. The specific flavors, aromas, esters, and phenols produced in the beer will depend on the brett strain and species, ranging from pineapple and hay to horse blanket and acrid smoke.<\/p>\n<p>The character of the beer is also influenced by the acids and alcohols available for combination into esters during fermentation.<\/p>\n<p>Tonsmeire notes:<\/p>\n<blockquote><p>Brett doesn&#8217;t turn the beers you make into sours; it turns a sour beer into a delicious beer.<\/p><\/blockquote>\n<p>Brett also doesn&#8217;t contribute much to the acidity of sour beers, since acid production is the responsibility of the bacteria.<\/p>\n<p>The only exception is when large amounts of oxygen are available, which causes Brett to produce acetic acid, creating a vinegar-like acidity.<\/p>\n<p>Brettanomyces fulfills the same function as Saccharomyces\u2014it ferments beer. However, Brett works more slowly, which means a beer that might have fermented in just a few weeks with brewer&#8217;s yeast could take months or years to exhibit its full character when Brett is introduced.<\/p>\n<p>The great beer writer <a href=\"https:\/\/www.thebeertimes.com\/es\/2016\/09\/23\/quien-fue-el-michael-jackson-de-la-cerveza\/\" target=\"_blank\" rel=\"noopener noreferrer\">Michael Jackson<\/a> once compared Saccharomyces to a dog and Brettanomyces to a cat:<\/p>\n<blockquote><p>Saccharomyces is trainable, generally predictable, and will come back to you when called. Brettanomyces, on the other hand, will run away whenever it feels like it and will probably scratch you when you bring it back.<\/p><\/blockquote>\n<p>In other words, Brett can be difficult to predict and manage, but if you can respect the yeast for what it is and what it can do, you will be rewarded in the end.<\/p>\n<p>Brett works well in tandem with the other microbes listed here, or on its own terms when enough is inoculated into the wort, as in <a href=\"https:\/\/www.thebeertimes.com\/es\/la-rueda-aromas-sabores-del-brettanomyces\/\" target=\"_blank\" rel=\"noopener\">100% Brett<\/a> beers.<\/p>\n<h3>3. <a href=\"https:\/\/amzn.to\/3e9tgiv\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Lactobacillus<\/a><\/h3>\n<p>Lactobacillus, also known simply as &#8220;lacto,&#8221; is a bacterium, not a yeast. Pedio is the other common lactic acid bacterium used in sour beers, as well as in other culinary roles such as acidifying sauerkraut and traditional dried sausages.<\/p>\n<figure id=\"attachment_13500\" aria-describedby=\"caption-attachment-13500\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-13500\" title=\"Sauerkraut\" src=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2017\/08\/sauerkraut.jpg\" alt=\"sauerkraut\" width=\"400\" height=\"224\" srcset=\"https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2017\/08\/sauerkraut.jpg 500w, https:\/\/www.thebeertimes.com\/wp-content\/uploads\/2017\/08\/sauerkraut-300x168.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><figcaption id=\"caption-attachment-13500\" class=\"wp-caption-text\">Sauerkraut<\/figcaption><\/figure>\n<p>Pedio, unlike lacto, requires a long aging period before it initiates a dramatic drop in the beer&#8217;s pH, which works as an advantage because it gives time for the primary yeast strain to complete its fermentation before a substantial pH drop occurs.<\/p>\n<p>The difficulty with pedio acidification is that most strains produce <a href=\"https:\/\/www.thebeertimes.com\/es\/2016\/10\/21\/diacetilo-en-la-cerveza-formacion-reduccion-y-control\/\">diacetyl concentrations<\/a> above the flavor threshold.<\/p>\n<p>Unlike brewer&#8217;s yeast, pedio does not reduce diacetyl by converting it into less flavorful byproducts. Instead, it leaves behind a buttery and\/or popcorn flavor.<\/p>\n<p>A good solution is to include Brett in beers that are pitched with pedio in order to eliminate the diacetyl. This will take time, so be patient if your beer tastes like movie popcorn when it is still young.<\/p>\n<p>Another key difference between lacto and pedio is the type of acidity they produce.<\/p>\n<p>While lacto produces a clean acidity, pedio can produce other funky aromas and flavors that result in a rougher acidity.
