the rest are used to describe flavors in <a href=\"https:\/\/www.thebeertimes.com\/a-que-nos-referimos-por-calidad-en-cervezas\/\" target=\"_blank\" rel=\"noopener noreferrer\">defective beers<\/a> or <a href=\"https:\/\/www.thebeertimes.com\/que-es-la-fermentacion-mixta-familias-cepas-e-interaccion-microbiana\/\" target=\"_blank\" rel=\"noopener\">specialty<\/a> beers.<\/p>\n<p>Based on this work, in 1979 Meilgaard developed a flavor and aroma wheel in an attempt to standardize the analysis language that would enable fluent communication between brewers, consumers, <a href=\"https:\/\/www.thebeertimes.com\/guia-para-convertirte-en-juez-de-cervezas-del-bjcp\/\" target=\"_blank\" rel=\"noopener\">judges<\/a>, <a href=\"https:\/\/www.thebeertimes.com\/en\/best-books-michael-jackson-the-beer-hunter\/\" target=\"_blank\" rel=\"noopener\">writers<\/a>, and anyone else related to beer.<\/p>\n<p>His work focused primarily on defining each identifiable aroma and flavor separately, and then categorizing them into a structured flavor and aroma wheel.<\/p>\n<p>Subsequently, this work was jointly adopted as a standard by the <a href=\"https:\/\/europeanbreweryconvention.eu\/\" target=\"_blank\" rel=\"noopener noreferrer\">European Brewery Convention<\/a> (EBC), the <a href=\"http:\/\/www.asbcnet.org\/Pages\/default.aspx\" target=\"_blank\" rel=\"noopener noreferrer\">American Society of Brewing Chemists<\/a> (ASBC), and the <a href=\"https:\/\/www.mbaa.com\/Pages\/default.aspx\" target=\"_blank\" rel=\"noopener noreferrer\">Master Brewers Association of the Americas<\/a> (MBAA).<\/p>\n<h2 style=\"text-align: left;\">Structure of the flavor and aroma wheel<\/h2>\n<p>Meilgaard&#8217;s flavor and aroma wheel gives a descriptive name to each aroma and flavor, grouping them with similar aromas and flavors within 14 different classes.<\/p>\n<p>The wheel contains a total of 44 first-level descriptors with common terms familiar to most people.<\/p>\n<p>Then, a second level breaks down the first-level descriptors into 76 specific characteristics.<\/p>\n<p>For example, under class &#8220;01, Aromatic, Fragrant, Fruity, Floral&#8221; \n<\/script>\n<\/div>\n<h2>Most common descriptors<\/h2>\n<p>Below are described some of the most common characteristics that can be found in beer evaluation and their numerical reference in Meilgaard&#8217;s flavor and aroma wheel.<\/p>\n<p>Some may be appropriate in certain styles but not in others, and desirability may depend on concentration.<\/p>\n<h3>1. Alcoholic (0110)<\/h3>\n<h4>Characteristics<\/h4>\n<p>Detectable in aroma, flavor, and mouthfeel (warmth). It is a general sensation produced by ethanol and higher alcohols.<\/p>\n<h4>Process<\/h4>\n<p>It is one of the final products of the fermentation process, once yeast converts fermentable sugars into carbon dioxide and ethyl alcohol.<\/p>\n<h4>Control<\/h4>\n<p>The amount and type of alcohols will depend on fermentable sugars and the yeast strain. Primarily, excessively high fermentation temperatures and the use of highly attenuative yeast strains should be controlled.<\/p>\n<h3>2. Solvent (0120)<\/h3>\n<h4>Characteristics<\/h4>\n<p>Detectable in aroma, flavor, and mouthfeel. At low levels, ethyl acetate can smell like flowers or chewing gum. At higher levels, it can smell like nail polish, acetone, lacquer, thinner, or glue. At very high levels, it produces a &#8220;hot,&#8221; &#8220;spicy,&#8221; or &#8220;prickly&#8221; mouthfeel, with an aroma that could even be irritating to the eyes.<\/p>\n<h4>Process<\/h4>\n<p>Produced by some yeast strains or wild yeasts, which may be accompanied by other <a href=\"https:\/\/www.thebeertimes.com\/esteres-vs-fenoles-en-la-cerveza-cual-es-la-diferencia\/\" target=\"_blank\" rel=\"noopener\">esters<\/a> and higher alcohols. High levels are always undesirable, but perceptible values are allowed in Old Ale beers.<\/p>\n<h4>Control<\/h4>\n<p>Maintain proper cleaning and sanitation of equipment, control excessive fermentation temperatures, and ensure a sufficient amount of healthy, active yeast.<\/p>\n<h3>3. Acetaldehyde (0150)<\/h3>\n<h4>Characteristics<\/h4>\n<p>Detectable in aroma and flavor. It is described as green apple, grated apples, or cut grass. Depending on the formation pathway, it may also have a vinegar (acetic) and\/or cider aroma\/flavor.<\/p>\n<h4>Process<\/h4>\n<p>It is a product of yeast metabolism at an intermediate stage of ethanol production. It can also be produced by oxidation and\/or bacterial contamination (Acetobacter or Zymomonas), which will produce vinegary flavors (acetic acid).<\/p>\n<h4>Control<\/h4>\n<p>Fully oxygenate the wort. Ensure vigorous and complete fermentation with a healthy yeast strain. Control fermentation temperature. Maintain proper cleaning and sanitation of equipment.<\/p>\n<h3>4. Fruity (0130) and Esters (0140)<\/h3>\n<h4>Characteristics<\/h4>\n<p>Detectable in aroma and flavor. They are aromatic compounds identified as a wide range of fruits (banana, apple, pear, and grape). In total, there are more than 90 different esters that can be detected in beer. At very high concentrations, they have solvent notes.<\/p>\n<h4>Process<\/h4>\n<p>They are produced by yeast action. The amount generated will depend mainly on the strain used and the fermentation temperature.<\/p>\n<h4>Control<\/h4>\n<p>Select a yeast strain appropriate for the style. Control fermentation temperature according to the yeast strain.<\/p>\n<h3>5. Grainy (0310)<\/h3>\n<h4>Characteristics<\/h4>\n<p>Detectable in aroma, flavor, and mouthfeel, it is perceived as raw grain, fresh, cereal husk, and\/or astringency. Depending on the style, grainy notes may be desirable, but astringency is not.<\/p>\n<h4>Process<\/h4>\n<p>The aromas and flavors come from compounds present in the malt, while astringency is produced by tannins present in the grain husk.<\/p>\n<h4>Control<\/h4>\n<p>Avoid excessive milling. Do not over-sparge the grains. Do not wash the grains with very hot or alkaline water. Avoid very extended mashes.<\/p>\n<h3>6. Isovaleric (0613)<\/h3>\n<h4>Characteristics<\/h4>\n<p>Detectable in aroma and flavor. It is described as blue cheese, Parmesan, sweat, and sometimes also as dirty socks or rotten.<\/p>\n<h4>Process<\/h4>\n<p><a href=\"https:\/\/www.thebeertimes.com\/en\/causes-and-effects-of-oxidation-in-beer-everything-you-need-to-know\/\">Caused by oxidation<\/a> of alpha acids in hops, usually during storage. The intensity of this characteristic decreases over time.<\/p>\n<h4>Causes<\/h4>\n<p>Store hops properly. Avoid using degraded or aged hops.<\/p>\n<h3>7. <a href=\"https:\/\/www.thebeertimes.com\/diacetilo-en-la-cerveza-formacion-reduccion-y-control\/\" target=\"_blank\" rel=\"noopener\">Diacetyl<\/a> (0620)<\/h3>\n<h4>Characteristics<\/h4>\n<p>Detectable in aroma, flavor, and mouthfeel. It is described as butter, margarine, buttered popcorn, or butterscotch (at high levels). In the mouth, the sensation is oily, greasy, and creamy, sometimes appearing as a full body.<\/p>\n<h4>Process<\/h4>\n<p>It is a fermentation byproduct that is normally reabsorbed by the yeast during the final stages of the process. It can also be produced by bacterial contamination (Pediococcus damnosus and\/or Lactobacillus).<\/p>\n<h4>Control<\/h4>\n<p>Maintain adequate cleaning and sanitation. Use healthy yeast in sufficient quantity. Hydrogen sulfide manifests with characteristics of rotten eggs, burnt matches, or sewage water.<\/p>\n<h4>Process<\/h4>\n<p>Normally produced by some yeast strains. Bacterial infections (Zymomonas, Pectinatus, and Megasphaera) can produce large amounts of hydrogen sulfide.
