frutas e ervas eram adicionadas \u00e0 cerveja tanto para fins de conserva\u00e7\u00e3o quanto para melhora do sabor.<\/p>\n<p class=\"ds-markdown-paragraph\">Um exemplo paradigm\u00e1tico \u00e9 a <a href=\"https:\/\/www.thebeertimes.com\/take-a-walk-on-the-wild-side-lambic-el-estilo-de-cerveza-mas-antiguo-del-mundo\/\">cerveja Lambic belga<\/a>, origin\u00e1ria do vale do Senne, que \u00e9 fermentada espontaneamente e maturada com frutas como cerejas (kriek) ou framboesas (framboise), dando origem a estilos complexos e \u00e1cidos com uma tradi\u00e7\u00e3o centen\u00e1ria.<\/p>\n<p evolu\u00e7\u00e3o da cerveja de frutas esteve ligada a inova\u00e7\u00f5es t\u00e9cnicas, como o <a href=\"https:\/\/www.thebeertimes.com\/historia-de-las-cervezas-ipa-india-pale-ale\/\">desenvolvimento da India Pale Ale (IPA)<\/a> no s\u00e9culo XVIII e, posteriormente, \u00e0 revolu\u00e7\u00e3o craft, em que a reintrodu\u00e7\u00e3o de <a href=\"https:\/\/www.thebeertimes.com\/pt-br\/9-variedades-lupulo-mais-influentes-todos-os-tempos\/\">l\u00fapulos com perfis c\u00edtricos<\/a>, como o Cascade, abriu as portas para combina\u00e7\u00f5es mais ousadas com frutas.<\/p>\n<p class=\"ds-markdown-paragraph\">Esse contexto hist\u00f3rico demonstra que a busca pela complexidade sensorial por meio de aditivos naturais foi uma constante na cervejaria, lan\u00e7ando as bases para a explora\u00e7\u00e3o contempor\u00e2nea.<\/p>\n<h2>Metodologia de elabora\u00e7\u00e3o<\/h2>\n<p>O processo de elabora\u00e7\u00e3o de cervejas com infus\u00e3o de frutas preserva as etapas cl\u00e1ssicas de <a href=\"https:\/\/www.thebeertimes.com\/como-hacer-cerveza-artesanal-paso-a-paso\/\">maltagem, mostura\u00e7\u00e3o, fervura, fermenta\u00e7\u00e3o, matura\u00e7\u00e3o e envase<\/a>. No entanto, a inclus\u00e3o de frutas introduz uma vari\u00e1vel decisiva no controle microbiol\u00f3gico e na cin\u00e9tica de fermenta\u00e7\u00e3o.<\/p>\n<p>As frutas podem ser incorporadas na forma de polpa, suco ou pe\u00e7as inteiras, tanto durante a fermenta\u00e7\u00e3o prim\u00e1ria quanto em fases secund\u00e1rias, dependendo do perfil sensorial desejado.<\/p>\n<p>A pesquisa indica que o tipo de fruta, seu grau de matura\u00e7\u00e3o e as condi\u00e7\u00f5es de fermenta\u00e7\u00e3o determinam o equil\u00edbrio entre acidez, do\u00e7ura, amargor e aromas. A tabela 1 do estudo mostra varia\u00e7\u00f5es significativas segundo o tipo de fruta e a levedura utilizada.<\/p>\n<p>Por exemplo, o uso de <em>Saccharomyces cerevisiae<\/em> a 18 \u00b0C em cervejas com uchuva seca produziu um teor alco\u00f3lico de 6,13%, enquanto a fermenta\u00e7\u00e3o com leveduras mistas em mosto de uva atingiu at\u00e9 6,9% de etanol, com <a href=\"https:\/\/www.thebeertimes.com\/que-es-el-ph-y-como-afecta-al-proceso-de-elaboracion-de-cerveza\/\">valores de pH<\/a> que oscilaram entre 3,4 e 4,0.<\/p>\n<p>Essas diferen\u00e7as refletem como a intera\u00e7\u00e3o entre os a\u00e7\u00facares da fruta e as leveduras modula a s\u00edntese de \u00e1lcoois, <a href=\"https:\/\/www.thebeertimes.com\/esteres-vs-fenoles-en-la-cerveza-cual-es-la-diferencia\/\">\u00e9steres<\/a> e \u00e1cidos org\u00e2nicos.<\/p>\n<p style=\"text-align: left;\">Tabela 1.
