The invisible chemistry and the earliest evidence

Speaking of cultural convergence is inevitably also speaking of a gender convergence in the ancestral division of labor.

This technical coincidence responds to biological logic: transforming a hard grain into a nutritious and safe beverage requires the same biochemical steps at any latitude. Nature imposed the rules, and human ingenuity—both female and male—knew how to read them.
Beyond the purely technical aspect, it is worth remembering that ancient beer fulfilled a nutritional function that we tend to forget today. In many pre-industrial societies, beer was safer than water, since the heating process and the resulting acidity from fermentation eliminated pathogens.
It was also a dense caloric source, rich in B vitamins, complementing often monotonous diets. It was not just a recreational beverage but a liquid food that sustained the daily lives of millions of people.

But the reality is that Europe is one more tradition within the global mosaic, with its own particularities, its own inventions, and its own contradictions.
The Celtic and Germanic peoples brewed barley, oat, and wheat beers long before the arrival of Christianity. These beverages did not contain hops but a mixture of herbs known as gruit, which included mugwort, yarrow, rosemary, and other aromatic plants depending on the region.
The sensory profile was radically different from modern beer—more herbal, more earthy, sometimes slightly resinous, with bitterness coming from herbs rather than the hop flower. These beers fulfilled a sacred and communal function.
They were consumed at large feasts that reinforced tribal bonds, offered to the gods in seasonal ceremonies, and considered a gift from the earth that must be shared.

From the Andean heights to the Amazon rainforests, from the deserts of northern Mexico to the North American plains, the continent’s indigenous peoples developed fermentative traditions as sophisticated and varied as those of any other region on the planet, and they did so completely independently of the rest of the world.
The word chicha, which we now use generically to refer to American fermented beverages, is actually a colonial term that lumps under one label an enormous diversity of preparations that indigenous peoples named with their own distinct words. Each culture had its own beverage, its own name, its own ritual, and its own technique, but all shared the same fundamental biochemical principle of transforming starches into fermentable sugars.
The Andes, where chicha is kin to corn
In the Andes, jora chicha made from malted corn has a history dating back at least to 3000 BCE, long before the rise of the Inca Empire. The Moche, Nazca, Wari, and Tiwanaku cultures already brewed and consumed chicha in large quantities, and archaeological remains of ceramic vessels with fermentation residues are abundant throughout the Andean territory.

But Andean chicha is not limited to jora. There is also chewed chicha, known in Quechua as akha or aswa, where cooked corn is chewed by women and then spat into containers where it ferments. Salivary amylase performs the same function as malting, and it also transfers the brewer’s bacterial flora to the beverage, creating a unique and personal fermentative profile.

In traditional chicherías, marked by a white flag or a corn cob at the door, the community gathers to drink, converse, and renew social bonds. Chicha is not just a beverage; it is an act of cultural resistance against centuries of attempted eradication.
Mesoamerica and Aridoamerica, from tesgüino to pulque
In northern Mexico, the Rarámuri peoples have been brewing tesgüino, a corn beer since time immemorial, fulfilling ritual, social, and political functions in the canyons of Chihuahua. The process is astonishingly similar to that of European barley beer. For the Rarámuri, tesgüino is a living being with its own agency. It is spoken to, prayed to, and offered to Onorúame, the creator deity. The quality of tesgüino depends not only on technique but also on the intention and spiritual state of the brewer. A brewer who prepares tesgüino with resentment or haste will obtain a different result from one who prepares it with respect and calm, regardless of whether the biochemical parameters are identical. This animistic conception of tesgüino is not a metaphor but an operational conviction that guides the entire brewing process.
Further south, on the Mexican plateau, pulque occupied a central place in the ritual life of the Nahua peoples. Although technically it is not a cereal beer but a fermentation of maguey aguamiel, it fulfills exactly the same social and symbolic functions as grain beers. Pulque was considered a sacred beverage, associated with the centzon totochtin, the four hundred rabbits, deities of drunkenness and fertility. Other Mesoamerican cultures brewed corn beers using various techniques. Spanish colonial authorities repeatedly attempted to prohibit chicha production, especially chewed chicha, which they found particularly repugnant. The Catholic Church associated chicha consumption with idolatry and paganism, and idolatry extirpators pursued chicheras and destroyed their ceremonial vessels.
Despite this persecution, American fermentative traditions demonstrated extraordinary resilience and survived in secrecy, in rural communities, and in the memory of the women who continued to brew them.
Today, the Americas are experiencing a brewing resurgence that seeks to recover these ancient traditions. In Peru, jora chicha is undergoing an urban revival driven by young brewers seeking to reconnect with their pre-Columbian roots.
In Mexico, craft breweries are producing modern versions of tesgüino and exploring the possibilities of native corn. In Bolivia and Ecuador, traditional chichas are beginning to be valued as cultural heritage and marketed with respect for their origins.
In the United States, craft breweries are experimenting with native blue corn, ancestral malting techniques, and spontaneous fermentations that seek to emulate the profiles of traditional chichas. In Brazil, cauim is being revalued by indigenous communities seeking to preserve their cultural heritage against the pressure of dominant culture.
This resurgence must be done, however, with respect and ethics. The decontextualized folklorization of American fermentative traditions, their commercial extraction without credit or benefit to the originating communities, and their reproduction outside ceremonial context constitute forms of cultural appropriation that reproduce the same colonial dynamics that for centuries tried to eradicate these traditions. True rescue is that which honors both the liquid and those who preserved it through centuries of marginalization and silence.
Africa as a great fermentation laboratory
The inclusion of Sub-Saharan Africa in this journey is not a late gesture of inclusion but a necessary historical correction. Sorghum and millet beers, known as umqombothi in South Africa, pito in Ghana and Nigeria, merissa in Sudan, or dolo in Burkina Faso, have roots dating back to at least 3000 BCE, making them contemporary with the earliest Mesopotamian beers.
Technically, they are masterpieces of empirical microbiology. They use artisanal malting in straw baskets where the grain is moistened and left to germinate for several days. It is then ground and mixed with water, leading to spontaneous fermentation combining wild yeasts and lactic bacteria.

The result is complex acidity profiles that Western brewing science now attempts to replicate in laboratories with selected cultures, without quite achieving the depth that these traditions reach naturally.

In many communities, refusing beer is refusing belonging to the community. It is not a beverage consumed individually and privately but a collective act that reinforces bonds and establishes reciprocal obligations among those who share it.
In the umqombothi tradition of South Africa, for example, brewing is the exclusive responsibility of women, and the quality of the beer is considered a direct reflection of the brewer’s skill and status within her community.
The beer is prepared in large quantities for circumcision ceremonies, weddings, and funerals, and its distribution follows strict social protocols that reinforce community hierarchy and ties of reciprocity. The act of sharing beer is not a simple gesture of hospitality but an affirmation of belonging and a renewed social contract.
Ignoring Africa in the history of beer is not only a geographic error. It is reinforcing a narrative that for a long time rendered invisible the continent’s technological achievements and perpetuated the idea that brewing innovation was born exclusively outside its borders. The reality is that Africa is one of the great independent fermentation laboratories on the planet, with a diversity of styles, techniques, and meanings that we are only beginning to document with the rigor they deserve.
Oceania and Insular Southeast Asia
If we expand the definition of beer beyond cereals in the strict sense, the map of convergence expands even further. In Oceania, kava (Piper methysticum) fulfills social and ritual functions analogous to those of beer.
It is a psychoactive beverage prepared collectively, central to welcome, reconciliation, and decision-making ceremonies. Although technically it is an infusion and not a fermentation, its role as a sacred social lubricant is essentially the same.
In the Fiji Islands, Vanuatu, Tonga, and Samoa, the kava ceremony is one of the most important rituals of community life. The plant root is ground or chewed, mixed with water, and served in coconut bowls distributed according to a strict hierarchical protocol. The collective consumption of kava creates a space of calm, dialogue, and consensual decision-making that fulfills exactly the same functions as beer in other cultures.

Kava does not intoxicate in the alcoholic sense, but it produces a state of relaxation and emotional openness that facilitates communication and reconciliation. In many Oceanic communities, conflicts are resolved by drinking kava together, and political alliances are sealed by sharing the same vessel. Its quality depends as much on technique as on the ritual intention of the brewer. A beer prepared with resentment or haste will not be the same as one prepared with respect and calm, regardless of whether the biochemical parameters are identical.

Master toji speak of koji as one would speak of a coworker, attending to its temperature and humidity needs with a dedication that transcends the purely technical.
In many West African communities, sorghum beer is brewed with singing and praying, and it is believed that the brewer’s emotional state directly influences the final flavor. This is not a poetic metaphor but an operational conviction that guides the brewing process from start to finish.
In the Amazon, cauim is brewed in collective ceremonies where women sing and converse while chewing cassava. It is believed that the words, thoughts, and emotions of the brewers are transferred to the beverage, and that cauim prepared in an atmosphere of harmony will have a different taste and effect from one prepared in an atmosphere of conflict.
In medieval Europe, beer was also surrounded by a symbolic and spiritual aura. Brewing monks invoked divine protection during brewing, and it was believed that the quality of the result depended as much on heavenly grace as on technical skill. The alewives used herbs that not only added flavor but were believed to have protective and healing properties. The boundary between the technical and the sacred was, in all cultures, much more porous than modernity has led us to believe.
Western science explains the how of fermentation. These worldviews explain the why and the for whom. A truly global approach does not impose biochemistry as the only truth but recognizes that both ways of knowing describe the same reality from complementary angles. Neither exhausts the meaning of the other.
Diffusion and convergence, an archaeological debate
For decades, there was an academic debate about whether beer had been invented only once, probably in the Fertile Crescent, and from there had spread to the rest of the world through trade, migrations, and conquests. This diffusion theory explains Eurasian expansion well but collapses when faced with the Americas, Africa, and Oceania. The peoples of these continents brewed their own fermented beverages millennia before transatlantic contact, without any cultural borrowing. There was, simply, multiple independent invention.
The Asian case reinforces this conclusion with a third technological path: the use of Aspergillus molds to saccharify rice, known as the koji or qu system. This demonstrates that convergence admits deep regional variations but confirms that the microbiological transformation of starches is a universal human discovery that did not require a single starting point.
In Egypt, beer functioned as an institutional daily ration and a unit of value within the pharaonic redistributive economy, not exactly as currency in a free market sense. In the Andes, it was poured to Pachamama as an offering. Among the Rarámuri, it is offered to Onorúame during agricultural cycle ceremonies. In Africa, it seals marriage alliances and accompanies rites of passage. In the Amazon, cauim mediates between the human and spiritual worlds. In medieval Europe, it was shared in taverns as an act of social communion and consumed in monasteries as spiritual and physical sustenance. The sacred and social function is another convergent constant that demonstrates how fermented beverage fed the body and, at the same time, wove the community.
Artisanal renaissance, between rescue and ethics
Globalization imposed the hegemonic model of pale lager over the last two centuries, progressively erasing this ancient diversity. Today, the craft movement is recovering native grains and ancestral techniques with an enthusiasm not seen since before industrialization.
In Mexico, there are breweries producing modern versions of tesgüino, although with standardized production methods that differ from the traditional Rarámuri process. In Peru, jora chicha is experiencing an urban revival among young consumers seeking to reconnect with their pre-Columbian roots. In South Africa, breweries led by Black women are reclaiming umqombothi as a legitimate commercial product, challenging centuries of marginalization. In the United States, experimentation is underway with native blue corn and heritage sorghum to create hybrid styles that fuse European and American traditions.
In Europe, the craft movement is also looking backward. Breweries in Germany, Belgium, and the UK are reviving historical styles such as gruit, Leipzig gose, and mixed-fermentation ales that preceded hop standardization. In Scandinavia, there is a resurgence of farmhouse ales brewed with local wild yeasts and smoking techniques dating back to the Viking era. This return to European origins is as valid and necessary as the rescue of Andean, African, or Asian traditions, because convergence implies that all traditions deserve to be remembered and celebrated.
However, this rescue requires an indispensable ethical warning: commercial revaluation must be carried out with respect, collaboration, and fair compensation to the communities that guard these traditions.
Decontextualized folklorization or extraction of indigenous knowledge without credit or benefit to their communities is not innovation but appropriation. The true brewing renaissance is one that honors both the liquid and those who preserved it through centuries of marginalization and silence.
This also implies recognizing that some traditions should not be commercialized. Certain ritual beverages are sacred, and their reproduction outside context constitutes a cultural violation. Beer curiosity, however legitimate, must have ethical limits. Not everything that can be replicated in a factory should be. There are knowledge systems that belong to a place, a community, and a ceremonial time that cannot be transferred to a bottling line.
A beverage that belongs to all humanity
The next time you raise a glass, remember that you are participating in a ritual repeated on every inhabited continent. It matters not whether it is blonde, dark, sour, made of barley, corn, rice, sorghum, millet, cassava, or sweet potato.
The idea of transforming a starch into a socially significant beverage is one of the great shared discoveries of our species. A discovery that was no one’s property and yet belongs to everyone.
A finding that reveals a profound truth: human ingenuity, faced with the same challenges and guided by the same hands, tends to find the same answers, even when separated by oceans, centuries, and different ways of naming the sacred.
Beer convergence is not just an academic hypothesis. It is a reminder that, at the core, we have always been one species seeking food, community, and meaning. And sometimes, all of that fits into a single glass.
